Calamari Cocktail
Ingredients
1 1/2 lbs squid, body cut into ring, tentacles cut in half
2 Tbls freshly squeezed lemon juice
1/3 cup white wine vinegar
10 each green olives with pimento, sliced
2 Tbls capers
1/4 cup olive oil
1 Tbls fresh oregano or 1 teaspoon dried oregano
salt and pepper to taste
1/4 cup green and red bell pepper diced
Method
- In a large saucepan of boiling water, cook the squid with the lemon juice for 2 minutes.
- Drain the squid in a colander and refresh under cold water.
- In a large bowl, whisk together the white wine vinegar, capers, olive oil and oregano.
- Add the diced peppers, green olives and calamari, combine the mixture well and let it marinate for at least 4 hours. Season to taste with salt and pepper.

Serve in a martini glass with a wedge of lemon.
