Calamari Cocktail

    • Ingredients

1 1/2 lbs squid, body cut into ring, tentacles cut in half
2 Tbls freshly squeezed lemon juice
1/3 cup white wine vinegar
10 each green olives with pimento, sliced
2 Tbls capers
1/4 cup olive oil
1 Tbls fresh oregano or 1 teaspoon dried oregano
salt and pepper to taste
1/4 cup green and red bell pepper diced
    • Method
  1. In a large saucepan of boiling water, cook the squid with the lemon juice for 2 minutes.
  2. Drain the squid in a colander and refresh under cold water.
  3. In a large bowl, whisk together the white wine vinegar, capers, olive oil and oregano.
  4. Add the diced peppers, green olives and calamari, combine the mixture well and let it marinate for at least 4 hours. Season to taste with salt and pepper.
  5. Serve in a martini glass with a wedge of lemon.
