Skewered California Albacore
Asian Marinated and Wrapped in Bacon
serves 4 people
Ingredients
1 lb California albacore, cut in 1 inch thick cubes
bamboo skewers
1/4 lb bacon
Asian marinade
Asian Marinade
1 Tbs red chili paste
5 cloves garlic, minced
1 Tbs fresh ginger root
2 Tbs cilantro, chopped
5 Tbs soy sauce
1 tsp oil
Method
- Soak bamboo skewers in water for 1 hour to prevent burning during grilling.
- Wrap albacore cubes with bacon and skewer.
- Marinate in Asian marinade for at least 1 hour.
- Place on a hot, clean grill and cook approximately 10 minutes or until fish
turns opaque.
