Ceviche of Scallops & Prawns
serves 6 people

    • Ingredients

12 large, fresh scallops cut into chunks
12 large fresh Prawns cut into chunks
1 green bell pepper, chopped
1 red bell pepper, chopped
medium red onion, chopped
1 Jalapeno seeded & chopped
1/4 bunch cilantro, chopped
juice of two limes
salt & pepper to taste
    • Method
Drop scallop chunks into boiling water for 3 minutes. Drop prawn chunks into boiling water for one minute. Drain and let cool. Add chopped peppers, onion, cilantro, lime juice, salt & pepper. Let marinade for at least 2 hours before serving.
